Nope... I mean, the iPhone is usually managed with iTunes (hence the 'only plays music from iTunes'), but there are no conversion processes required. Unless you download audio in FLAC, RM, ASAHSUYB or some other weird format. In that case, you have to convert it into mp3 or one of the supported formats:
AAC (8 to 320 Kbps)
Protected AAC (from iTunes Store)
HE-AAC
MP3 (8 to 320 Kbps)
MP3 VBR
Audible (formats 2, 3, 4, Audible Enhanced Audio, AAX, and AAX+)
Apple Lossless
AIFF
